RAINBOW MANGO FIESTA SALSA

Ingredients for this Rainbow Mango Salsa:
Chopped mango (avoid overripe)
3/4 small red onion
1/4 red pepper
1/4 green pepper
1 small tomato
1/2 jalapeño (de-seeded, if making a mild version)
Bunch of cilantro
Juice of one lime
1/2 teaspoon paprika
1/2 teaspoon cumin
Salt and pepper to taste
Dice everything finely. The key is to refrigerate and let it marinate in the lime juice. Best enjoyed cold with tortilla chips and on tacos. Simple, easy, fresh and toddler-friendly too!
